Speaking of Pumpkin recipes, here’s a fun recipe I ran across a few years ago for Chocolate Chip Pumpkin Cookies that have always been a hit, especially around Halloween:
Scrumptious Pumpkin Chocolate Chip Cookies
Ingredients
2 Sticks Unsalted Butter, softened
1 Cup Granulated Sugar
1 Cup Light Brown Sugar
2 Large Eggs
1 Teaspoon Vanilla Extract
1 cup Pumpkin puree (canned is fine)
3 Cups All-purpose Flour
2 Teaspoons Baking Soda
1/2 Teaspoon Salt
1 Teaspoon Ground Cinnamon (Hint: I like to buy most of my spices & herbs in bulk at natural/whole food stores, they’re usually much cheaper this way & fresher too imo!)
1/4 Teaspoon Nutmeg
2 Cups Chocolate Chips
1 Cup Chopped Walnuts (optional)
Directions
Preheat the oven to 375 Degrees. Line your cookie sheets with parchment paper to prevent sticking. Using a hand mixer, beat the butter until smooth. Gradually add in both the brown & granulated sugars, blending until the mixture is light & fluffy, then beat in the eggs one at a time. Next, add the vanilla and pumpkin puree. In a separate bowl, whisk together flour, baking soda, salt, cinnamon & nutmeg. Gradually mix the flour mixture into the pumpkin batter. Stir in the chips & the optional walnuts. Drop rounded tablespoons onto the prepared cookie sheets. Bake 15-20 minutes or until the edges are lightly browned. Noted: Baking time will vary a bit, depending on your oven. Let rest on cookie sheets 2 minutes before transferring them to a wire rack to cool. Enjoy! ![]()
