No Bake Oatmeal Cookies Recipe

Here is a super easy no bake oatmeal cookies recipe. I have tried several no bake cookies recipes in the past, but this was an old classic recipe that I tweaked a little bit and it turns out great every single time.

Ingredients:
1/2 Cup Butter
2 Cups Sugar
1/2 Cup Evaporated Milk
4 Tablespoons Baking Cocoa
1/2 Cup Creamy Peanut Butter
2 teaspoons Vanilla
3 Cups Quick-Cooking Oats

Recipe:

  1. Add butter, sugar, evaporated milk and cocoa to a medium saucepan.
  2. Bring ingredients to a rolling boil and maintain for 60 seconds (I highly recommend a timer, this part of the recipe is crucial. I’ve boiled it too long and the whole batch of cookies have come out crumbly).
  3. Remove from heat, add peanut butter and fold in until melted.
  4. Then add Vanilla
  5. Mix in Oats
  6. Drop by Tablespoonfuls onto wax paper
  7. Let Cool until set.

Optional ingredients: You can also add 1/4 cup coconut for an extra touch. Personally, I prefer it without.
Miscellaneous notes: You can make substitutions if you like (like margarine instead of butter, whole milk instead of evaporated milk), but I have tried all different kinds of ingredients and the ones I have in this recipe are the ones that have worked best for me. This is one of those recipes that is super easy to make, but it goes quickly and can harden fast or turn dry and crumbly. In my experience, the best way to get awesome cookies each and every time is to have all the  ingredients already measured out and ready to go when you make this recipe. I have all my ingredients lined up, pre-measured in cups and bowls, all ready before I start. Believe me, I have learned the hard way that this is by far the best approach. It also makes for a lot easier clean-up. 😉

Just be warned that these cookies are so darned good that once you make them they will be gone in no time, so plan on making a second batch in the near future. They freeze well too.
