Here we have a roundup of delicious looking yet healthy St. Patrick’s Day treats and snacks. I am always looking for recipes that are simple to make, that are healthy and that do not cost a whole lot to make. That’s not too much to ask right? With green being such a dominant color for St. Patrick’s Day, there are all sorts of ideas to come up with because we are blessed with such an abundance of green fruits and vegetables, not to mention a veritable rainbow of other fresh fruits and veggies. My particular favorite is the Green Bell Pepper. Not only is it’s vibrant green color perfect for St. Patrick’s Day, but when the pepper is sliced, it lends itself to a clover shape, perfect for this holiday! Here are a few yummy ideas to add to your St. Patrick’s Day festivities.

In celebration of Valentine’s Day, I thought it would be fun to do a roundup of Valentine’s Day treats and snacks. And since I have switched to eating healthier foods, I thought it would be even more fun to post about healthy Valentine’s Day treats. After all, we are SO blessed with having such an amazing variety of natural, beautiful fresh fruits and vegetables in glorious, vibrant colors. Instead of using coloring food dyes and all the other chemicals that go into highly processed food, isn’t wonderful to enjoy what is in nature and all around us? Anyway, since I have embraced a healthier lifestyle over the last couple of years, I wanted to share a few amazing ideas I found around the internet for fun and delicious alternative Valentine’s Day snacks to the more traditional sugary treats.

How to Make a Heart-Shaped Egg from Anna the Red. What a fantastic idea on how to make heart shaped hard-boiled eggs! I just love this idea and plan on giving this one a try myself!

Holidays like Easter often means you’ll no doubt have loads of leftover ham. While I absolutely love ham just as it is, it is also great to have a few ideas on what else do with it other than grabbing a hunk out of fridge and eating it cold (which I have done on many an occasion). So, with that in mind, I scoured the internet and complied a list of the the yummiest recipes for delicious things to do with leftover ham. I am always amazed at the ingenuity of what people can create. Seriously, people and their imaginations rock! This list includes a nice variety for every diet, from the decadent to healthy and everywhere in between. Sugar-Free Cranberry Sauce

I am a big fan of fresh cranberry sauce, but I am not a big fan of all the sugar that typically goes in a traditional recipe. I started experimenting with making a sugar-free cranberry sauce and after a few attempts, I came up with a tasty version everyone really loves. The first batch I tried came out like paste, it was just, well, bad. After a few experiments, the cranberry sauce with apples was the biggest hit. I tried several different kinds of apples, but ended up liking Gala apples the best. They seem to have the best texture and right amount of sweetness to offset the tartness of the cranberries. I wanted to keep this recipe all-natural and I no longer use any artificial sweeteners, so I experimented with liquid stevia, powdered stevia and monk fruit. The powdered stevia was by far the winner out of the three. Anyway, I hope you enjoy the recipe, I really love how easy it is to make. The only bad thing about is that it does not long at all, it is gone in no time flat every time I make it.

This easy Smoked Sausage Cabbage Soup recipe is an absolute favorite in our household. I love it because it is so simple to prepare and it is always a big hit, this hearty and satisfying soup never lasts long when I make it. It freezes well too, but it usually doesn’t last long enough for me to freeze any, it’s generally long gone by then. Soups are one my favorite foods to make for several reasons. I just love that soups are so flexible, it is one of those items you can throw together from items in your pantry in a matter of minutes. They can be cooked easily over the stove, or even better, in a slow cooker!

Zippy Pea Salad

Here is my take on a classic pea salad recipe. I call it my “Zippy Pea Salad” because it is a traditional pea salad with just a little extra kick. We like things zesty at our house, so I just spiced up the ingredients a bit. Let me first start off by saying that I LOVE pea salad. I love it so much, I could probably write a whole series of different variations of pea salad and never get bored with it. And every time I make it, it always disappears very quickly, not matter what version of it I prepare. Beyond loving the taste, I love that it is super simple to make and that the ingredients are generally cheap to purchase. For example, you can pick up 1 lb bags of frozen peas for less than a dollar at many stores (or even less on sale or when paired with coupons).

Ingredients:

Frozen Peas – 16 oz package (thawed in the refrigerator overnight)
Mayonnaise – 2 Tablespoons
Greek Yogurt – 1 teaspoon (optional)
Red Onion – 1/2 Cup Diced
Jalapeno Cheddar Cheese – about 2-3 ounces (to taste), crumbled
Black or White Ground Pepper – 1/2 teaspoon

Directions:

Drain any excess water from the thawed frozen peas. I find it works well to pat the frozen peas with a paper towel to completely remove any excess liquid, preventing a soggy salad. Believe me, a soggy salad is an unappetizing salad indeed. Add mayonnaise, Greek yogurt, red onion, cheese and ground pepper and mix well. Chill, serve and enjoy quickly because this one will not last long!

Notes: If you don’t have any Greek yogurt around, no worries. I make my zippy pea salad all the time without it and it is still awesome. I find the Greek yogurt just adds a little extra zing. You can also use yellow onions instead of red onion, but I like the extra color the red onion brings to the salad. Also, if you want to add an extra richness to this classic salad, you can also throw in 2-3 pieces of crispy bacon, finely crumbled, very yummy!
